Guacamole!

I reckon I could eat this stuff by the bucket! Guacamole is one of my favourite foods (I know, I know, I say that a lot, but I have a big heart to love lots of foods!)

This guac is pretty standard with one secret LAB addition that people seem to love. So if you make guacamole already, have a look at the ingredients and give the secret ingredient a go; and if you don’t already make it… well I just don’t understand why you wouldn’t make something so tasty and easy – so go make guacamole now!

This guacamole has lots of optional additions which you would add depending on what you’re using you guacamole for. As a dip it is nice to have a few extra flavours and textures so some crunchy capsicum and tomato is great. If I had fresh salsa for my burrito or taco already I’d leave some of the repeat ingredients out like tomato and fresh jalapeños so that each component of dish has its own unique contribution.

Guacamole
Serves 4-6, 10 minutes preparation

2 ripe avocados
2 good pinches of salt
Juice of 1 big fat lime
Secret LAB addition: yoghurt! About 4 tablespoons of plain yoghurt (omit for vegan)
2tsp cumin, ground (or more…if you’re a cumin addict)
1 ½ tsp ground coriander seed
Something onion-y: either 2 shallots diced or half a large red onion diced
½ cup (loosely packed) of fresh coriander, chopped (optional but preferable)
Jalapeños (fresh or from a jar), diced (optional)
Chilli sauce (not option for the LAB, but optional for you)
1 medium tomato diced (optional)
½ capsicum (bell pepper) diced (optional)

Scooped (avocado), squished (lime) and sprinkled (salt)


Instructions: Scoop, Squish, Squash, Slice, Sprinkle, Smush

So yoghurt is the secret ingredient! It’s a little more common to have sour cream, but plain yoghurt adds a great tang and creaminess.

The idea of adding yoghurt comes from my Mum who always used yoghurt instead of sour cream as a healthy alternative and so it’s a flavour I have loved with Mexican despite the lack of convention. Give it a go, I have surprised a lot of people with how good yoghurt is as a sour cream alternative and this guacamole always goes quickly when friends are over.
