Chunky Bacon, Corn & Jalapeno Dip

This dip has more balls than an Ikea playpen – it’s not for the faint-hearted. It is absolutely jam packed full of flavour; each mouthful a surprise. Will it be crunchy or soft, sweet or salty, spicy or herby?

You start with beautiful, creamy avocado through which you can find salty, crispy little bacon morsels, followed by bursts of sweet corn all rounded out with spicy, crunchy, pickled jalapeno and coriander.

I think this dip would be perfect for watching a big game, or to have with a few good beers on a sunny afternoon.

SO MUCH FLAVOUR! (yes, it even deserves all caps)



Chunky Bacon, Corn & Jalapeno Dip

1 large avocado
4 rashers of short cut bacon (free range)
1 cob of corn, kernels stripped
4 pickled jalapenos, diced – make some small and some big pieces
Fresh coriander (cilantro), chopped
½tsp ground coriander seed
Juice of half a lemon
Salt (if needed, the bacon may be enough)

So I had to stop myself eating all the jalapenos before they made it into the dip…


You’ll get a lot more flavour if you fry the corn.


Fry the corn until it colours a little and releases all its sweetness. The corn will be little bursts of sugar on your cracker. Then fry the bacon until crispy and dice it into small pieces.

A little bit of everything


Scoop the avocado into a mixing bowl and mix through all the ingredients.

This looks so healthy and mild, HA…just be ready for the bacon and jalapeno surprise attack


This would be best with some tortilla chips, but was good on crackers and made an excellent sandwich filling.
